Baijiu is mainly made from grain with Jiuqu, active dry yeast, glucoamylase and others. It is distilled liquor made by saccharification, fermentation, distillation and aging. Baijiu has a long history, emerging up a thousand years earlier than the West liquors, but its origins seemed more complicated. It can be classified by product methods as solid and semi-solid, or by different aromas into twelve types: strong aroma、sauce aroma、light aroma、rice aroma、phoenix aroma, mixed aroma, medicine aroma, sesame aroma, special aroma, soy aroma, Laobaigan aroma, and fragrant aroma.
